Festive Roasted Eggplant with Pomegranate Seeds

Makes 6 servings.

Prep time: 10 minutes

Cook time: 35 minutes


INGREDIENTS

  • 2 Eggplant (small/med), sliced into thin circles.

  • 2 Tbsp Olive Oil

  • 2 Tbsp Apple Cider Vinegar

  • 1 Tbsp Maple Syrup

  • 1/4 tsp salt

  • 1/4 tsp Red Pepper flakes

  • 1/4 tsp Paprika

  • 3/4 tsp Za'atar Spice blend

  • 4 oz Pomegranate seeds (1 small container or 1 fruit)

INSTRUCTIONS

How to bake eggplant perfectly.

  • Step 1: Preheat oven to 415 F.

  • Step 2: Wash, dry, and slice eggplant into thin circles.

  • Step 3: In a small bowl, combine oil, apple cider vinegar, maple syrup and spices. In a large bowl, toss all eggplant slices in your oil mixture, be sure to coat well on both sides.

  • Step 4: Use an oil spray to lightly grease an oven safe pan and arrange all eggplant slices in a single layer.

  • Step 5: Cook for 20 minutes, then flip eggplant slices and top with pomegranate seeds. Bake for another 10-15 minutes or until eggplant easily cuts with a fork.

 

Serving Suggestion:

Serve warm as one of your easy Thanksgiving sides or enjoy as a yummy vegetable side dish any time of year!

Weeknight meal suggestion: Beef shawarma on whole wheat pita with Roasted Eggplant and Pomegranate seeds.
