Roasted Corn and Summer Squash Salad (GF)


This is about to be your new favorite summer side dish! It's easy enough for weeknight dinners, but looks and tastes impressive enough to serve at your weekend barbecue.

If you've followed me for a while, you'll know that I encourage filling half your plate with vegetables at every meal. And it's so much easier to do when the veggies are this delicious! Filling up on vegetables is an easy way to portion control in any situation, but it also has infinite health benefits. Vegetables aid in lowering inflammation, they provide the vitamins and minerals your hormones need to function, they're full of disease fighting phytonutrients, and vegetable fibers feed and nurture a healthy microbiome. You're serving some serious self care!

Serving Suggestion:

Try serving 1.5-2 cups of summer squash salad with 3oz grilled chicken thighs, turkey burger, or crispy tofu for a well-rounded meal. You can keep it simple with this one!
